At Beiler Family Farm our beef bones for soup are cut from the shank. The beef shank comes from the leg portion of the cow. Naturally, this part of the cow is hard-working, resulting in lots of muscle, connective tissue, bones, and joints. The beef shank can sometimes get a bad rap and a difficult cut of meat because it is too tough, but that's not true!

When properly cooked this cut makes for an extremely tender and flavorful meal! The hard-working muscles from this part of the cow can hold up to long slow cooking methods. When cooked this way it has time to meltdown those nutritious connective tissues and marrow, and impart that beautiful natural beef flavor into the meal. 

For best results try braising or simmering the beef soup bones in broth for a few hours. You won't be disappointed!
