This cut comes from high up on the shoulder of the pig.

It is relatively tough because it is a hard working muscle, and is best cooked low and slow.

Cooking methods like stewing, roasting, and braising allow time to breakdown connective tissue, render dat, and results in a beautifully tender meal.

This is the perfect cut for making pulled pork for BBQ or tacos!
